Bibingka Recipe*

In many countries, cultures, and communities, food has a long, rich history of bringing loved ones together. Cooking together as a family can be a wonderful bonding experience that spans generations!

Just ask Josh from Blue’s Clues & You. He loves making his Lola’s Bibingka recipe. Eaten traditionally around Christmas in the Philippines, this savory rice cake has an irresistible hint of sweetness. Now you and your family can make this delicious dish too!

Steps

Pre step

Ask your grown-up to heat the oven to 350 degrees. Generously grease a cast-iron skillet – or any oven-safe pan – with butter.

Step 1

Whisk together the rice flours, sugar, salt, and baking powder in a big bowl. Add the melted butter, coconut milk, and eggs, then whisk until smooth.

Step 2

Pour the mixture into the skillet and ask a grownup to put in the oven. Bake for 15 minutes.

Step 3

After your grown-up removes it from the oven, top the bibingka with cheese.

Step 4

Ask your grown-up to return it to the oven for 20 to 25 minutes – or until the bibingka is golden and browned. When you insert a toothpick, it should come out clean!
