Cut up and mash ripe tomatoes, shred mozzarella cheese, and slice thin zucchini strips with a vegetable peeler.

LAYER

Slice a long roll in half, then on the flat side, layer on tomato sauce, mozzarella cheese, and zucchini strips. Add sliced black olives as eyes!

COOK

Bake at 375 degrees for 15-20 minutes or until the cheese has melted and the zucchini is cooked through.
