Pepper Upper Black Bean Quesadillas

Quesadillas are a quick and yummy snack that kids love! They can have any type of ingredient, so feel free to add your favorites. This recipe includes energy-boosting peppers sure to put a smile on your face!

Directions

Strain the water out of the can of beans, rinse and strain again. Then pour the beans into a mixing bowl and mash them.

Add the cheese to the mashed beans and stir. Then add the cumin and cilantro, and stir again.

Spoon ⅓ of the bean and cheese mixture onto one side of a tortilla and smooth it into an even layer. Sprinkle ⅓ chopped peppers on top and then fold the tortilla in half to make a semi-circle. Press down lightly on the tortilla. Repeat to make three quesadillas.

Cook in a toaster oven for 2-4 minutes until golden brown. Use a spatula to remove them from the toaster oven, then use a pizza cutter to cut them into triangles. Garnish with chopped tomatoes and enjoy!
